Take a whole chicken weighing at least 2 kilograms. Divide it into portions, wash them and dry with paper towels. Pour 3 tablespoons of olive oil into a hot pan and fry as many chicken parts on it as fit. It is necessary to fry over medium heat for about 10 minutes, constantly turning the pieces so that they are fried as evenly as possible. Then add a little more oil and fry the next portion. Put the finished chicken on napkins to allow excess fat to drain.

Grind 150 grams of green onion. Peel, rinse and chop the mushrooms in an amount of 200 grams not very finely. Free three medium carrots from the peel and cut into thin circles. 150 grams of bacon must be cut into small pieces. Chop 4 cloves of garlic as small as possible. Using a grater, remove the zest from one lemon and measure 20 grams, the remaining zest will not be needed. Set the oven to warm up and set the temperature to 220 ° C.

In the pan where the chicken was fried, add another 50 grams of olive oil, pour 2 tablespoons of wheat flour and fry, breaking the lumps. Once the flour has a golden hue, add slices of bacon, mugs of carrots and onions. Fry until vegetables soften. Do not forget to stir to prevent burning. Transfer mushrooms and chicken into a pan and cook for another 5 minutes.

Transfer all the prepared ingredients into a glass form and fill with one glass of chicken broth, the same amount of red dry wine and 2 tablespoons of brandy. Then add chopped garlic, lemon zest and 1 teaspoon of cumin. Season with salt and pepper, mix, cover and put in the oven. After 15 minutes, check the dish for taste and, if necessary, add more salt and pepper. After 5 minutes, the oven can be turned off.
