In fact, baking beautiful pies in a gas oven is quite possible. Accustomed to electric stoves, housewives complain that gas baking burns from below and does not bake from above. The reason for this lies in the principle of the gas oven: the heat source in it is located only below, in contrast to the electric oven, in which the heating elements are installed around the perimeter. But knowing a few tricks, you can bake great pies even in a gas oven.

Do not use the thick-walled baking sheet that came with the cooker. It is not intended for baking, but for collecting fat from meat cooked on a wire rack. When you try to bake a pie on it, you will block the streams of warm air circulating in the oven, and the pastries will burn on the bottom and remain moist on top.

Preheat the oven well before placing the dough pan in it. It is recommended to turn on the gas for maximum fire for 10-15 minutes, then reduce the flame to medium or low (depending on the recipe) and put the cake.

You can try putting a container of water at the bottom of the oven, which compensates for the temperature rise in the lower part. For old stoves, experienced housewives advise putting a couple of refractory bricks in the oven. Funny as it may seem, bricks make the heat distribution in the oven more even. If you are reluctant to go behind the brick, you can instead fill the baking sheet described above to collect fat with coarse salt and put it down.

An important role is played by the layout of the cake. Unfortunately, there is no exact recipe here, in each case you need to experiment and try to bake not in the middle of the oven, but, for example, in the top. Only the rule remains unchanged that the baking dish should be positioned so that air circulation is ensured.

If you tried everything, but the baking fails, it makes sense to invite a master to repair gas stoves. Sometimes uneven baking is caused by improper installation of the stove or internal defects.

Use a silicone baking mat, it will not solve all the problems with a gas oven, but life will be easier by protecting your pastries from burning. To get a crust, try to bring the cake to readiness over low heat, and then increase the temperature for 5 minutes, then turn off the gas.
