An unpleasant incident such as “overshot” can happen to any cook. I didn’t calculate a little, or was distracted by something, I forgot that I was already adding salt to the pan or the stewpan. As a result, the dish seems to be hopelessly spoiled. It remains either to pour out or to listen to unpleasant comments about their culinary abilities. But do not despair! Excess salt, which gives an unpleasant taste to the dish, can be “neutralized” in most cases. How so?

If we are talking about the first dish, then the quickest and easiest way out is to simply add water, thereby “thinning” the soup to reduce the concentration of salt. But this is an indicator of frank unprofessionalism! After all, the taste of the dish will probably be worse than it could be. No self-respecting specialist will do that.

A much better way, albeit more time-consuming, is to add a “guy”, that is, a product that will absorb excess salt in the cooking process. This can be, for example, raw peeled potatoes, the amount of which is determined empirically, depending on the volume of the dish and the degree of "salting." Fig is well suited for this purpose. It, in a tied gauze bag, is placed in a container with a boiling dish, and after it absorbs excess salt, it is removed.

If the broth intended for serving on the table in “pure form”, that is, without dressing, is re-salted, you can put, for example, homemade fresh noodles in it. When it breaks down, it is removed. Here, “two birds with one stone” are killed with one shot - and they correct the taste of the first dish, and make an excellent side dish for the second. It is only important to make sure that no flour remains on the noodle strips, otherwise the broth may take an unpleasant “cloudy” look.

If the second dish is salted, in some cases, the same raw potatoes, raw carrots, cabbage, turnips are suitable to neutralize the excess salt. In a word, almost any vegetable. After the taste of the main course improves, the “guy” is removed. On its basis, you can make a good side dish, for example, a stewed vegetable mixture.

But, of course, this is far from possible in all cases. It is almost impossible to remove excess salt from chops, from cutlets. Therefore, if you are not sure about the accuracy of the dosage, it is better to slightly salt the broken pieces of meat, or minced meat!

And remember: ready-made pasta is not suitable as a “delay”! Since they, as a rule, already contain salt, albeit in small quantities.
