Sun-dried tomatoes have a rich tomato flavor and original appearance. You can cook them yourself, but it is much easier to purchase ready-made tomatoes that are canned in oil. Sun-dried tomatoes prepare a variety of Mediterranean-style salads, as well as pastas, pizza and other interesting dishes.

Sun-dried tomato salad

You will need:

- 150 g of sun-dried tomatoes in oil;

- 200 g of mozzarella;

- a handful of pitted olives;

- a bunch of endive;

- 0.5 red onion;

- 2 cloves of garlic;

- olive oil;

- balsamic vinegar;

- fresh herbs (basil, marjoram, oregano);

- salt;

- freshly ground black pepper.

Wash and dry lettuce leaves. Tear them into large pieces with your hands and place them on a flat dish. Cut dried tomatoes into strips and put on a salad. Cut mozzarella into cubes, onion into thin rings. Place whole olives and mozzarella cubes on top of the tomatoes. Put onions on top.

In a bowl, combine olive oil, balsamic vinegar, salt, black pepper and chopped greens. For taste, you can add oil in which tomatoes were canned. Pour the salad over the salad and serve with fresh white or grain bread.

Pizza with sun-dried tomatoes and mozzarella

Try a simple but tasty dish - pizza with sun-dried tomatoes and mozzarella. The dish is hearty, but moderately high-calorie.

You will need:

- 250 g of wheat flour;

- 120 g of sun-dried tomatoes in oil;

- 150 g mozzarella;

- fresh basil;

- 2 tbsp. tablespoons of olive oil;

- a handful of pitted olives;

- dried oregano;

- 4 tbsp. tablespoons of water;

- 0.5 tsp of salt;

- freshly ground black pepper.

Remove the dried tomatoes from the jar and cut into small pieces. Sift the flour, mix it with salt, water and olive oil. Knead the dough, put it on a board sprinkled with flour, and knead until it turns into a smooth lump, well behind hands. Roll the dough into a cake and put it on a baking sheet.

Lubricate the cake with olive oil, chop in a few places with a fork. Spread whole sliced ​​mozzarella on the surface, whole olives and pieces of sun-dried tomatoes. Sprinkle pizza with dried oregano and place in the oven, preheated to 200 ° C. Bake until the sides of the pizza are lightly browned. Before serving, sprinkle the product with olive oil, sprinkle with freshly ground black pepper and garnish with fresh basil.

Shrimp and sun-dried tomato pasta

You will need:

- 450 g of spaghetti;

- 400 g of boiled frozen shrimp;

- 80 ml of white wine;

- 50 g of sun-dried tomatoes;

- a bunch of arugula;

- 2 cloves of garlic;

- 1 lemon;

- salt;

- freshly ground black pepper.

Boil spaghetti in salted water and discard in a colander. Heat olive oil in a pan and fry chopped garlic in it. Add the shrimp and, stirring, cook for 2-3 minutes. Pour in white wine, add the sun-dried tomatoes sliced ​​in slices and simmer the mixture for a few more minutes.

Add salt, freshly ground black pepper and lemon juice. Place spaghetti and pre-washed and dried arugula in a pan. Arrange the pasta on warmed plates and serve with white chilled wine.
