  • For puff pastry:

  • - 2 cups of flour;

  • - 180 ml of water;

  • - 250 g of butter;

  • - 1 egg;

  • - lemon acid;

  • - salt.
  • For a light puff pastry:

  • - 600 g of wheat flour;

  • - 300 g cream margarine;

  • - 2 tsp baking powder;

  • - 2 tsp salts;

  • - 8 tbsp. l ice water.
  • For meat filling (per 500 g puff pastry):

  • - 350 g of ground beef;

  • - 350 g of pork minced meat;

  • - 1 egg;

  • - 100 g of onions;

  • - ½ tsp salts;

  • - vegetable oil.
  • For apple filling (per 500 g puff pastry):

  • - 500 g of apples;

  • - 100 g of sugar;

  • - 10 g of cinnamon;

  • - ½ lemon;

  • - 1 egg.

Puff pastry

Sift the flour with a slide and make a depression in the center. Beat the egg in a separate bowl, pour in cold water, add salt and citric acid. Mix well. Pour the mixture into the deepening of the flour and knead the smooth dough. Cover it with a napkin and place in the refrigerator for half an hour.

Mix butter with 3 tablespoons of flour until smooth. Form a square from the prepared mixture and put it in a cold place.

Remove the dough and oil mass from the refrigerator and roll them separately so that the dough turns out to be a square larger in size than the oil mass. Put the prepared oil mixture at an angle in the middle of the rolled dough and bend the edges of the dough "envelope". Roll into a layer 1.5 cm thick. Roll it 3-4 times, cover with a damp cloth and place in the refrigerator for 30 minutes.

Then again roll the dough into a layer, after which again fold several times and put in the refrigerator for 15 minutes. Repeat this process 3 more times.

Light puff pastry

Sift flour into a large bowl, add baking powder and salt. Mix well. Then put the cream margarine and chop it with the flour mixture with a knife until the mass looks like large crumbs. After that, gradually, one spoonful, pour in ice water, stirring the dough with a fork. When it begins to stick together, transfer the dough to a flour-sprinkled table and continue kneading until smooth.

Puff pastry with meat

Peel and finely chop the onions. Combine ground beef and pork, add onion, salt and mix thoroughly. Pour the vegetable oil into the pan and fry the meat filling on it. Roll out the puff pastry, cut into squares. Spread on each cooked meat, form pies in the form of triangles or envelopes and pinch. Put the pies on a baking sheet, grease each with a beaten egg and place for 25 minutes in a baking oven heated to 200 ° C.

Puff pastry with apples

Peel the apples and chop finely. Sprinkle with lemon juice, add granulated sugar, cinnamon and mix thoroughly. Leave the filling for a while so that the apples give the juice, then drain it. Roll out the puff pastry, cut into squares and put apple filling on them. Pinch around the edges, grease the cakes with a beaten egg and transfer to a greased baking sheet. Preheat the oven to 180 ° C, place the puff pastries in it and bake for 20 minutes.

Due to the fact that sugar is not added to puff pastry, baking from it is classified as unsweetened. However, toppings for puff pastry pies can be prepared from a wide variety of products: meat, fish, vegetables, jam, cream, chocolate, fruits and berries.
