You will need:

  • finely chopped onions - 500 g;

  • flour - 2 tsp;

  • green onions to taste.

It is advisable to collect nettles in the fields and meadows, away from the city and the highway (this way the plant absorbs less toxic substances). Choose clear leaves that do not fade in the sun.

Rinse nettle leaves under running water. In order not to get burned, do it with gloves. Bring to a boil a deep pan with boiling, salted water, add nettles, blanch for two to three minutes. Blanching is a short-term steaming of a product.

Let the leaves cool, chop or tear the nettle leaves with your hands into medium pieces (like Peking cabbage for Caesar salad) salt, sprinkle with grated nutmeg and move the pan to the side.

Melt the butter in another pan, add onions. Our goal is not to fry the onion until golden brown, but only slightly warm it, then the taste and aroma will be fully revealed.

In a deep bowl, combine flour, salt, green onions and prepared nettles. In the center of the greenery, make a small depression (a small well).

Pour dry yeast into a small amount of water, stir until completely dissolved, pour into the recess. Knead the dough for 10 minutes.

Place the dough in a greased bowl, cover with a damp cloth and let stand for 60-90 minutes until it swells in half.

Put the finished dough on a clean surface of the table, form loaves of the same size, place in molds oiled. Cover, and leave the dough for another 60 minutes (then it will turn out more magnificent).

Make sure that the dough does not extend beyond the edges of the form. Bread should rise two-thirds and be several centimeters below the edges of the form.

Preheat the oven to 220 degrees, place the pan for frying at the bottom. Place the bread pan inside.

After 25 minutes, remove the loaves from the molds, put them back in the oven and bake for another 8 minutes.

The first 25 minutes you can bake steamed bread - add ice cubes to the tray or add a little cold water.

Nettle bread can be served not only with soups, but also as a separate, very original snack. Prepare a spread of garlic arrows with butter, sprinkle with chopped dill on top. Bread can be fried on both sides, greased with a curd paste with sour cream, sprinkle with cheese or finely chopped radishes on top.
