You will need

  • - 1 large and ripe banana;

  • - 150 g whole grain flour;

  • - 0.75 tsp baking powder;

  • - 0.75 tsp soda;

  • - a pinch of salt;

  • - 150 ml of buttermilk;

  • - 50 g of Demerara sugar + 1.5 tsp;

  • - 1 small egg;

  • - 35 g of butter;

  • - 100 g blueberries.

Preheat the oven to 180 degrees. We prepare molds for cupcakes: we line them with special cuffs for baking or grease with butter. If you bake in silicone, then you can simply sprinkle lightly with water.

Melt the oil in a water bath or in the microwave and cool slightly. Remove the peel from the banana and knead it with a fork, a pusher or a blender in mashed potatoes. Separately, sift flour into a deep bowl with soda, baking powder and a pinch of salt. Mix with 50 g of sugar. In the center of the mixture we make a well, where we add the egg, butter and milk. Add the banana puree and mix with a spatula. You should not knead for a long time, otherwise the muffins will not be magnificent! Add blueberries and mix gently again, trying not to mash the berries.

We lay out the dough according to the molds, leaving them slightly unfilled. We send to the oven for about 25 minutes: the finished muffins should turn golden and rise, and the match or toothpick should come out of them dry. Ready cupcakes can still be sprinkled with hot 1.5 tsp. brown sugar and serve.
