Divide the finished dough into two unequal parts: 1/3 and 2/3. Roll out most of the dough to fit the shape, not forgetting to form the sides. Roll the smaller one into a ball, wrap in cling film and put in the refrigerator. Place the workpiece with the mold in the refrigerator during the preparation of the cream.

Wash the cherry and remove the seeds from it.

Put the oven up to 180 degrees and start cooking custard. Grind the yolks with icing sugar and flour into a cream until smooth.
