    • For sea bass with saffron and pine nuts:
    • 1 kg seabass fillet;
    • 50 ml of port;
    • 125 ml of water;
    • 2 tbsp raisins;
    • a handful of pine nuts;
    • a pinch of saffron;
    • salt;
    • cilantro.

Sea bass baked with lemon Clean, gut and wash the fish. Dry it with a towel and rub it on top and inside with a mixture of salt and caraway seeds.

Wash the lemon and cut into circles.

Cover the baking sheet on which the sea ​​bass will be baked with two layers of foil. Put a portion of lemon slices on it and place the fish on them. Put a few lemon slices inside the carcasses of the sea bass, spread the rest on top, as if covering the fish. Cover it on top with two more layers of foil, bend the edges and seal with an envelope.

Preheat the oven to 220 degrees Celsius and place a pan with fish in it for fifteen minutes. After that, take out the sea bass, open the foil, grease the fish on top with butter and put it back in the oven for another ten minutes to bake until fully cooked.

Make the sauce. Squeeze the juice from half a lemon and mix it with olive oil. Add warm fish stock and mix well. Before serving, pour fish meat with sauce.

Sea bass with saffron and pine nuts Wash and dry the fish with a paper towel. Then cut into small pieces and sprinkle with salt.

Pour port wine into a small saucepan and heat it over low heat. Put the washed raisins with saffron in a bowl, mix, fill with warm port and leave for a few minutes to swell the raisins.

Lightly fry the pine nuts in a pan, add port wine with raisins, pour in water and bring everything to a boil. Then put the pieces of fish and sweat in a pan literally one minute on each side.

Put the fish on a plate, add heat and boil the sauce about halfway. Before serving, pour the sea bass with raisin sauce, sprinkle with pine nuts and garnish with cilantro leaves.

Sea bass can simply be fried in a deep pan in a large amount of vegetable oil. The main thing is not to overcook it. To prepare a sea bass weighing 500 g, it is enough to fry it for only four minutes on each side.

Useful advice

Fried potato wedges, tomato salad with red onions and various vegetable stews are well suited for garnishing with seabass. But this is one of the few species of fish that goes poorly with rice.
