Lemons are fragrant and juicy fruits from which you can make an original pie. Not too sweet, easy to prepare and extremely healthy. Such a wonderful treat is suitable for both a festive and a regular table.

You will need

    • For the test:
    • flour - 1 kg
    • yeast - 1 sachet,
    • sugar - 150 g
    • salt - 1 tsp (without slide)
    • milk - 2 tbsp;
    • margarine - 50 g
    • egg - 1 pc.
    • For filling:
    • lemons - 2 pcs.,
    • sugar - 150-200 g
    • starch - 1 tbsp. spoon (with a slide).
    • For coating:
    • one egg yolk.

Get some cool dough. To do this, pour the yeast into a glass, add a teaspoon of sugar, pour a little warm (but not hot) water, mix and let stand for ten minutes. When this yeast starts to ferment and the mixture forms a thick foam, add salt and mix until completely dissolved. Rub sugar with the egg. Mix all the ingredients necessary for the dough and knead until the dough is soft and uniform. Then put the dough in a warm place to ferment.

When the dough rises (after about an hour and a half), knead it properly. Put in heat again and let it rise. Then knead again.

Give the dough a kolobok shape and roll it into a layer about 1 cm thick. The layer should be round in shape. You can leave a little dough to decorate it before baking a cake.

Fifteen minutes before you need to bake a cake, put the oven to heat up (200 degrees).

Grate the lemons on a fine grater. Before grating lemons, remove the seeds from them (otherwise the cake will be bitter).

Then grind lemons with sugar, add starch and mix thoroughly.

Spread the resulting filling evenly on the dough, leaving 3 cm from the edge.

Bend the edges without filling so that they cover the filling on top. You can press the edges of the cake with a fork, then you get a kind of pattern.

Now separate the protein from the yolk (break the egg so that you get two identical halves of the shell and transfer the egg from one to the other). Roll out a small rectangle from a piece of dough (the thickness of the dough should be no more than 5 mm) and make small cuts on the sides. Put the decoration in the form of a cute leaf on the cake. Cover the lemon pie with the yolk and place in the preheated oven.

Bake the cake at 200 degrees until golden brown.
