Potato is an integral product of any kitchen. From it you can make many different dishes, ranging from basic potato pancakes to cakes. He is also good in that you can quickly cook a delicious and satisfying dinner out of it without making much effort. Spices for cooking, choose for yourself. Flight of fantasies over cooking is unlimited. One of the most favorite dishes among the Slavs is potatoes with mushrooms. It does not require any special skills and expensive ingredients. In addition, it is prepared very quickly.

You will need

    • salted (0.5 l) or fresh (300-400 g) mushrooms;
    • 1 kg of potatoes;
    • 2 onions;
    • salt to taste;
    • vegetable oil.

Peel a kilogram of potatoes. Rinse it and put in a saucepan, or a deep bowl, pour it with cold water for a while.

Finely chop two onions and sauté them over medium heat until lightly browned and soft. After frying, onions can be taken out of the pan, or left in it.

Take fresh or salted mushrooms and cut them into medium-sized slices. The plates should not be too thick or thin. If the mushrooms are salty, then rinse them with cold water.

Put the chopped mushrooms in a pan. Fry over high heat with constant stirring until the moisture evaporates. After frying, the mushrooms should have a light golden crust. If fresh mushrooms are fried separately from onions, then the juice that they secrete during frying can be drained or evaporated. Mushroom juice can later be used as a sauce.

Take pre-peeled and washed potatoes and cut them into slices about 0.5 cm thick or 1 cm cubes. To prevent slices or sticks from sticking together during cooking, they should be washed with cold water. To do this, you can use a regular colander.

Put mushrooms out of the pan and add oil to it. After a couple of minutes, put the chopped potatoes in the hot oil. Fry it over high heat without covering. Cook until crusty. Once it forms, reduce the heat and mix the potatoes thoroughly. Stir from bottom to top, with an interval of 3-5 minutes. To avoid mashed potatoes, stir them with a thin spatula.

When the potatoes are almost ready, put mushrooms, fried onions in it and salt everything. Stir everything and fry for another 5 minutes, without closing the lid. For taste, put a few bay leaves on top.

After five minutes, turn off the heat and cover the potatoes with mushrooms. Potato potatoes for 5-10 minutes.

Buy mushrooms only in stores to avoid food poisoning.

It is best to use young potatoes for cooking. If there is such an opportunity, then it is best to take it as the basis of the dish. It is perfectly fried, easily crusty and does not get damaged when mixed.
