Rinse the goose well and coat with the mixture and salt. Preheat the oven to 200 ° C and place the goose in it. Place a baking tray with water under the wire rack. After 20 minutes, reduce the temperature to 160 ° C and bake the goose for about 2 hours.

Rinse the cabbage, chop, add the grated carrots, salt, sugar and vinegar. Squeeze and marinate for 20 minutes. Then simmer for about 15 minutes. Add red wine, and after 10 minutes add white wine. Before stewing, add the remaining honey and ginger.
