Fricasse is the French name for the dish, reminiscent of our vegetable stew. The main characters in the dish are meat and vegetables. Lemon juice, white pepper and sage, which are used in veal fricassee, add sophistication to the dish.

Ingredients:

  • Veal without bones (scapular or thoracic part) - 1 kg;

  • Chicken broth - 1 l;

  • Bay leaf - 1 pc;

  • Flour - 2 tbsp.;

  • Leek (it can be replaced with ordinary onions) - 2 pcs;

  • Sage - 1 tsp;

  • Carrots - 2 pcs;

  • White pepper - 10 grains;

  • Salt - 1 tsp;

  • Egg yolks - 2 pcs;

  • Butter;

  • Juice of half a lemon;

  • Cream - 100 g;

  • Pepper.

Cooking:

  1. Cut and set aside the leaves of leek. Rinse and tie them, so that later they can be easily separated from the dish. Leek stalk (white part) set aside. Cut the carrots into three-centimeter cubes.

  2. Rinse and lower the meat into a deep pan with plenty of water. Water does not need to be salted. Bring the meat to a boil and cook for about 5-7 minutes. Then drain and rinse the meat under a stream of running water.

  3. Next, put the meat in a clean pan and pour pre-cooked chicken broth. Add diced carrots, leek greens, bay leaves, sage (it will give the dish an interesting specific taste), white peas and a teaspoon of salt. Bring the contents to a boil, then cook for another 1 hour while stirring occasionally.

  4. Cut the stalk of leek into small pieces of 2 cm. And add them to the broth, half an hour before cooking.

  5. Put the prepared meat, carrots and white parts of the onion in a dish and keep warm.

  6. Now you need to cook the gravy. Strain and cook the broth without covering, until the contents are reduced to 500 grams.

  7. Mix flour and butter, dilute them with a couple of spoons of warm broth. Beat egg yolks with cream.

  8. Bring the broth to a boil. Add the diluted flour to it. Cool slightly, then pour in a mixture of egg yolks and cream. Cook for another 3 minutes. Squeeze juice from half a lemon, pepper and salt.

  9. Pour the meat and vegetables into the sauce. Serve with rice or boiled potatoes. It is easy to choose a drink for the dish, for example, white wine is perfect.
