Take the eggs. For two eggs, separate the whites and yolks. Beat 2 yolks and 1 egg with sugar. Beat until sugar is completely dissolved. Add the milk, sifted flour and baking powder to the beaten eggs. Mix the dough thoroughly. Beat the remaining proteins separately and gently insert them into the dough.

Grease a baking dish with butter. Pour half the dough into the mold. On top, lay the halves of canned apricots with the convex side up. Pour the remaining dough and smooth the surface with a spoon. Bake the cake at 200 degrees for 45 minutes. Cool the finished cake in the form, then carefully remove it.

Put the jam in a small pan, pour in apricot juice or water. While stirring constantly, bring the mixture to a boil. Remove from heat, cool a little and glaze the top of the pie. Then cut the pie into portioned slices. Each piece can be decorated with a sprig of mint.

Fruits can be laid out at the bottom of the mold and completely filled with dough.
