You will need:

1 kilogram of herring fillet (halves of fish);

3 medium onions;

1 cup orange juice;

2 tbsp. tablespoons of olive oil;

salt, ground black pepper to taste.

For the sauce:

1 cup cranberries;

0.5 cups of sugar;

4 teaspoons of grated horseradish;

0.5 cups of dry red wine;

salt, ground black pepper;

6 pcs pears - fresh or canned for decoration;

greens for decoration.

Finely chop the onion, fry it in olive oil until golden brown, pour in orange juice, add salt and pepper. Stew for 20-30 minutes before evaporating the juice, cool. On a long strip of herring, put the onion stuffing, roll the rolls and lay them on a plate. Garnish with greens and halves of pears, pour over the sauce.

To prepare the sauce, cranberries need to be crushed with a blender, mixed with sugar until completely dissolved, add horseradish, wine, salt and spices. Mix everything thoroughly.
