Fassolada is a popular delicious Greek soup. As is the case with our borsch, there are plenty of options for preparing this soup. We bring to your attention one of them - this soup is suitable even for fasting.

You will need

  • - 400 g of white beans;

  • - 100 g of olives;

  • - 3 onions;

  • - 2 carrots;

  • - 2 tomatoes;

  • - 1 stalk of celery;

  • - 2 liters of water;

  • - 2 tbsp. tablespoons of olive oil;

  • - 1 teaspoon of black pepper;

  • - salt.

At night, soak white beans in cold water, rinse it in the morning, fill it with cold water, cook for 15 minutes. Then completely drain the water, again fill the beans with cold water, cook already until cooked. Beans should be soft, but not mushy.

Peel the carrots, cut into circles. Grind celery and one onion. Instead of onions, you can take leeks - it is more suitable for bean soup. Sauté these vegetables in olive oil until tender, add mashed fresh skinless tomatoes.

Add fried vegetables to almost ready beans, and boil soup. Salt, pepper to taste.

Separately, cut the other two onions in half rings, pickle in any way that you like best. For example, in a mixture of vinegar, vegetable oil and spicy spices.

Let the soup brew for 20 minutes, serve hot. Separately, serve pickled onions and black olives to fassolade.
