Wash the meat, dry it with a paper towel and cut into even identical circles - escalopes. Lightly beat off with a kitchen hammer on both sides.

Dip the spinach in boiling water for 15 seconds, then immediately transfer it to a bowl of ice water. Then grind most of the sauce, and leave a little for decoration. Peel and chop the garlic and divide into 2 parts. Mix one part with chopped spinach. In hot oil, fry the spinach and garlic, pour half the cream, and bring to a boil.

Peel the onion and cut into small cubes. Rinse and chop the basil, leaving a few leaves for decoration. In a separate frying pan, heat the vegetable oil, and fry the onions. Then pour in the remaining cream and bring the sauce to a thickening. Next, add fresh basil. Separate the yolks from the proteins and mix them with the sauce.

Boil asparagus in salted water. Season the meat with salt and pepper, fry in a pan on both sides for 1 minute. Then, put the meat in a baking dish, pour the spinach sauce, put the slices of cheese. Bake meat for 7 minutes at a temperature of 180 degrees.

Put sauce with basil on a plate, pieces of meat on top, decorate with asparagus and spinach next to it.
