Eclairs - a delicacy that many love since childhood. These delicious custard pastries with cream are suitable for festive tea parties. But you can improve them by adding delicious chocolate sauce and vanilla ice cream.

You will need

  • For eight servings:

  • - 400 g of vanilla ice cream.

  • For choux pastry:

  • - 250 ml of water;

  • - 160 g of flour;

  • - 5 eggs;

  • - 100 g butter;

  • - a pinch of salt.

  • For chocolate sauce:

  • - 100 g of dark chocolate;

  • - a glass of fat cream;

  • - 3/4 cup sugar;

  • - 40 g of butter;

  • - 2 teaspoons of vanilla extract;

  • - 2 tbsp. tablespoons of corn syrup.

First you need to make a custard dough. Bring water and oil to a boil, add a pinch of salt. Pour in flour a little while stirring. Remove from the stove, cool. Beat the eggs one at a time, after each mixing the mass until smooth.

Preheat the oven to 190 degrees. Put the dough on a baking sheet at a distance of 5 cm. Spread with a pastry syringe in the form of small strips or a teaspoon. Bake the eclairs for 30-40 minutes until golden brown. Do not open the oven while baking.

While the eclairs are cooking, make a chocolate sauce. Grind the chocolate in a blender until fine crumbs.

Mix sugar, cream, corn syrup in a small saucepan. Syrup needs to be added to obtain a more uniform sauce structure. Bring to a boil over low heat.

Pour the hot cream mixture into a blender with chocolate, add vanilla extract and butter, cut into pieces. Mix until smooth.

Cut prepared custard cakes into halves, fill with ice cream, pour chocolate sauce on top. Serve immediately until the ice cream begins to melt.
