You will need

  • - medium-sized zucchini - 2 pcs;

  • - large onions - 2 pcs.;

  • - large carrots - 2 pcs;

  • - tomato paste - 2-3 tbsp. l;

  • - mayonnaise - 2-3 tbsp. l;

  • - vinegar 9% - 1-2 tsp;

  • - sugar, pepper and salt - to taste;

  • - vegetable oil for frying.

Wash the zucchini, peel the seeds and peels, cut them into cubes.

In a pan with a thick bottom, pour vegetable oil and fry the zucchini until slightly golden, then cover, reduce heat to a minimum and simmer the zucchini until they become almost transparent and soft.

Peel and finely chop the onion. Grate carrots on a coarse grater. Fry the carrots and onions in a separate pan with the addition of oil.

Add the fried carrots and onions to the zucchini and simmer everything until they are soft and almost homogeneous, without adding salt.

Grind the resulting vegetable mass using an immersion blender until smooth. Add tomato paste and sugar, salt, pepper, put mayonnaise in caviar. Boil caviar for about an hour over low heat, cover with a lid.

If you need to keep caviar for a long time, at the end of cooking add vinegar to it, put it in sterilized jars and roll up with sterile lids. Turn the jars of caviar upside down, wrap and leave to cool completely.
