From beans you can cook various side dishes, appetizers or full dishes, because this product is unusually satisfying. However, before that, it is important to boil it correctly. To prepare a healthy “rainbow” bean, you will need: 200 g of white beans and 100 g of red and black, 1/4 root of parsley and celery, carrots, red onions, 1 teaspoon of sugar, vegetable oil, salt to taste.

Red and black beans must be put in a bowl, pour cold water and leave for 8-12 hours, periodically changing the water. White beans should be soaked for 2-3 hours before cooking, as it is usually cooked much faster. After the set time, the product must be drained, washed and, laid out in different saucepans, set to boil, adding sugar to the water. The latter should be three times more than beans, since it increases quite a lot in volume.

Soaking is necessary not only to soften the beans, but also to remove oligosaccharides from it, which can lead to bloating and digestive problems.

White beans are usually cooked 30-50 minutes after boiling, and red and black - 40-60 minutes. In any case, it is important to try it first - the finished product should be soft. Salt beans should be 15 minutes before the end of cooking, otherwise it will be cooked even longer. Then the water needs to be drained.

The roots should be peeled and grated, finely chopped carrots. Then, lightly stir everything in vegetable oil, add spices, for example, coriander or nutmeg, black pepper. Put chopped red onions and mix everything with beans. The finished dish should be sprinkled with fresh herbs.

Beans are useful for violations of the cardiovascular system, nervous overload, high blood sugar, disorders of the genitourinary system and weakened immunity.

You can also cook another snack from multi-colored beans. To do this, you need to boil a glass of different beans in the manner described above, put in a colander and cool. Then add a couple of chopped red onions, ½ cup sour tomato, 3 tbsp. tablespoons of vegetable oil, fresh parsley and cilantro. Mix everything, cool a little in the refrigerator and serve.

Another delicious and beautiful dish is rainbow beans with walnuts in wine vinegar. To prepare this dish you will need: 200 g of boiled red, white and black beans, ½ cup chopped walnuts, parsley, a pinch of saffron, 4 tbsp. tablespoons of wine vinegar, a pinch of basil, salt to taste.

Pour wine vinegar into a stewpan, add a pinch of basil, spices and bring to a boil. Then add chopped nuts, mix everything and remove from heat. Put boiled beans in a salad bowl, add greens and mix everything with a nut-vinegar mixture.

It turns out very tasty and healthy beans with eggplant. To prepare such a dish you will need: 150 g of beans of different colors, eggplant, onions, bell pepper, herbs, vegetable oil, 1 tbsp. a spoon of tomato paste. Boil the beans, cut the eggplant into cubes and soak in salt water for half an hour. Then it must be fried in vegetable oil along with onions and bell pepper. Add salt, spices, beans, tomato paste and a little warm water. Stir everything and simmer for 5 minutes. Sprinkle with greens at the end.
