Borsch is the most popular dish, which contains beets. Use both fresh and sauerkraut for borsch. When stewing, make sure that the beets are not burnt. To do this, pour the broth or water into the beets as needed. Experienced housewives know that there are various options for cooking borsch. So, to make an original beetroot soup with mushrooms and prunes, you need: 400 grams of cabbage, 100 grams of mushrooms, 400 grams of beets, 400 grams of potatoes, 100 grams of butter, carrots, parsley root, onion, a teaspoon of flour, half a glass tomato puree, spices and salt to taste.

First, wash the mushrooms, boil them in water and chop. Then chop the beets with straw, place in a saucepan and pour a glass of mushroom broth. Add tomato puree and simmer until half ready. Fry onion, carrots and spices in oil and mix with passivated flour. When the mushroom broth boils, put chopped cabbage, potatoes, prunes, stewed beets, fried onions, flour, spices and carrots in it. Throw mushrooms into the soup last. Boil the soup until cooked. While serving, garnish the soup with parsley.

If you want to cook borscht from a young beetroot, use its tops. First, cut the tops into slices and boil in salted water. Then add the grated beets, and 1 tbsp. oils. Bring the soup to readiness. Please note that other vegetables are not put in the soup. This is a wonderful summer borsch, which requires a minimum of ingredients. Serve the dish to the table with a lot of sour cream, finely chopped parsley and dill.

Beets stuffed with cottage cheese and raisins are an original dish, which is quite simple to cook. First, prepare the filling: wipe the 500 grams of cottage cheese or pass through a meat grinder. Combine it with 4 tbsp. l raisins, 3 eggs, sugar and cooked semolina (0.25 cups). Stir this mixture thoroughly. Now take 2 medium-sized beets, wash and boil or bake in the oven until cooked. After this, cool the beets, remove the peel and clean the middle to put the filling there. Place the stuffed beets in a pan with butter and bake in the oven. Before serving, generously pour sour cream on the dish.

Beets always make tasty and healthy salads. For example, beetroot salad with apples. For it, you will need 250 grams of boiled beets, fresh juice of half a lemon, 2 apples, 1 tsp. sugar, 2 tbsp. vegetable oil, parsley, dill and salt to taste. Chop the beets and apples on a coarse grater, mix. Pour in the lemon juice, add sugar, salt and season with vegetable oil. Finally, decorate the salad with fresh herbs.

To prepare a salad of beets with nuts, take 4 boiled beets, 4 apples, 10 walnuts, 4 tbsp. mayonnaise, 4 tablespoons sour cream, 2 cloves of garlic, sugar, salt and herbs. Boil beets and grate on a coarse grater with apples. Add chopped walnuts, sugar, salt to the beets and season the salad with sour cream and mayonnaise. Serve with parsley. This salad can be cooked without apples. Then sugar should not be added.

In order for the beets to retain their color, 2-3 grams of vinegar should be added to the soup.
