Blackberry compote without sterilization

Ingredients:

- chokeberry - 400-500 g;

- sugar - 500-700 g;

- water - 1 l.

Prepare the sugar pour, i.e. boil water with sugar, make sure that the sugar is completely dissolved. Empty the stalks and washed berries, pour in jars and pour hot pouring. Quickly roll up jars and wrap them in blankets or old fur coats. Leave to cool completely.

You can diversify the recipe by adding apples, plums, raspberries or cherries to the list of ingredients. Compote will only benefit from this, i.e. will not be so tart. Also, instead of sugar pouring, you can use apple or raspberry juice. Some housewives pre-soak mountain ash in cold water, so that excessive astringency is gone. However, it should be remembered that with soaking from the berries, useful substances also leave. In a word, whether or not to carry out this procedure is decided individually.

Blackberry jam

Ingredients:

- chokeberry - 1 kg;

- sugar - 1.5 kg.

Chokeberry is a fairly hard berry. Therefore, in order to more deeply impregnate the berries with syrup, it should first be frozen. To do this, place the washed black chokeberry in the freezer for 3-4 hours. When freezing, the water contained in the cells of the berries will turn into ice crystals, which with sharp edges will break the delicate cell walls. Through the resulting numerous microcracks, the syrup will penetrate inside the berries when cooking jam.

Transfer the frozen black chokeberry into prepared dishes (pot, bowl), pour hot syrup, bring to a boil and cook over medium heat for 12-15 minutes. Then turn off the stove, cover the dishes with jam cover or towel and leave for 6-8 hours. After that, cook the mountain ash for 10-15 minutes, transfer to sterilized jars, close the lids. When the jam has cooled, put it in a dark, cool place.

Aronia tincture

Ingredients:

- chokeberry - 200 g;

- cherry leaf - 100 pcs.;

- sugar - 2 glasses;

- vodka - 700 ml;

- water 1.5 l.

Pour rowan berries and cherry leaves with water, put on a fire and cook after boiling for 15-20 minutes. Strain the broth, add sugar, pour vodka and stir until sugar is completely dissolved. Bottle, close with tight caps and clean in the cold. After a month you can get to the festive table.
