You will need:

- 200 g of cherry or 3 pcs. large tomatoes;

- 1 tsp tomato paste;

- 0.5 tsp vinegar

- 1 small onion;

- 1 clove of garlic;

- 300 g seabass fillet or cod;

- olive oil;

- parsley branches;

- 0.5 tbsp. green peas;

- pepper, sugar and salt to taste.

Prepare the tomatoes - wash them and blanch. To do this, immerse the fruits in boiling water for 1-1.5 minutes. Then rid them of seeds and peels. Grind the tomatoes in a duet with basil using a blender. Transfer to a pan and bring the resulting mass to a boil. Reduce heat to low and hold for another 10 minutes, stirring occasionally.

Add tomato paste and mix. Salt, pepper and add sugar to your liking. Keep in mind that the sweet tint in this marinade should prevail. If desired, you can add table vinegar.

Chop the onion head in half rings. Crush the garlic clove, and then chop coarsely.

Heat the pan with olive oil and fry the onion half rings on low heat for 10 minutes. Add garlic a minute before cooking.

Prepare the fish fillet - wash and dry on a paper towel, then cut into small pieces. Put the fried onions and garlic in the bottom of the baking dish. Place fish pieces on top. Pepper, salt and sprinkle with chopped parsley. Pour in tomato marinade and pepper again a little. Put green peas on top. Bake fish in the oven for half an hour at 200 ° C.

Baked fish with capers and olives

Olives and capers are those products that enrich and complement the taste of fish. Take halibut fillet for this recipe. Experiment!

You will need:

- 1 medium onion;

- 1 clove of garlic;

- 6 olives; - 2 tsp capers;

- 150 ml of white wine;

- 10 tbsp. l olive oil;

- 500 g halibut fillet;

- seasoning for fish.

Chop the onion very finely, chop the garlic, and cut the olives in half. Combine the ingredients and add the capers. Halibut filling is ready.

Rinse the fillets and sprinkle with fish seasoning on both sides. Put half of the halibut in a baking dish, put the filling on top, and then the second part of the fillet. Pour white wine over the top and drizzle with olive oil. Leave the fish alone for 10 minutes, during which time the fillet should be marinated.

Bake halibut in the oven at 200 ° C for 20 minutes. Before serving, sprinkle the fish with chopped fresh dill.
