Dumplings prepared according to this recipe turn out to be remarkably satisfying. The rich taste of the filling is given by fried pieces of bacon and onions.

You will need
- - 415 g of flour;
- - 310 ml of water;
- - 3 eggs;
- - salt;
- - 525 g of beef liver;
- - 185 g of fat;
- - 215 g of onions;
- - 55 ml of vegetable oil.

Peel the onion, rinse thoroughly and cut into thin rings. Slice the fat into small pieces. Clean beef liver from film and veins. In order to make it softer, pre-soak for 1 hour in milk.

Wash the finished liver, dry it slightly and cut into small cubes no larger than one centimeter in size.

Fry slices of bacon in a preheated pan. When they are well fried, pull them out with a slotted spoon and put the chopped onion in the same pan.

Sauté the onion for about 7 minutes. Then shift the liver slices into a pan with onions and continue cooking for another 35 minutes.

Then remove the pan from the heat, cool everything a bit and grind it with a blender until a homogeneous mass is obtained. Add the greaves and salt to this mixture, mix and slightly pepper.

Boil 510 ml of water. Sift flour into a large bowl and then very carefully pour hot water into it. Stir everything very quickly so that lumps do not have time to form.

Break the eggs into a small bowl, add 400 ml of warm boiled water, sugar and a little salt to them, mix everything thoroughly.

Pour this mixture into a bowl with diluted flour and start the dough. Then leave it in a bowl, covering with a towel, for about 45 minutes.

After that, divide the finished dough into two parts and roll it into a layer with a thickness of not more than 3 mm. Using a glass, cut out circles from this layer. Then, on each circle, put a little filling from the liver and how to close the edges.

Boil water in a deep pan, salt and boil the dumplings until cooked. Serve them with sour cream and fried onions.
