You will need
- For 4 servings:
- - 700-800g of veal;
- - 200 g of hard cheese;
- - 200g feta cheese;
- - 50-100g of boiled pork;
- - 2 sweet bell peppers;
- - 2 fresh cucumbers;
- - 2 grapefruits;
- - 100g leek;
- - 100g of melted lard;
- - 100g of red wine;
- - 300g of meat broth;
- - 2-3 cloves of garlic;
- - salt, ground black pepper, curry, chili.

Pour bell pepper and leek with boiling water, cut the skin and finely chop. Blanch in melted fat until golden brown.

Wash grapefruit, peel, pit and finely chop. Add to vegetables.

Cut the veal along the layers with a thickness of 4-5 cm. Put all the pieces on a kitchen plate and beat off until you get a single layer of meat. Add seasoning.

Rub the cheese through a sieve or use a blender. Lubricate the resulting mass of meat cake. On top of the cheese, put the boiled pork and fried mixture of pepper, leek and grapefruit.

Then gently roll everything into a roll and fix it with kitchen thread. Put the roll in a deep pan and fry in melted lard. Pour in wine and broth, add finely chopped garlic. Bring to a boil and simmer under the lid over low heat for 45-50 minutes. After putting the roll on a dish and serve.
