The rear shanks have more meat, so they are the best suited for second courses. One of the most delicious treats made from pork shank is the whole baked shank in the oven. In principle, there is nothing complicated, but worth it. Your men will surely appreciate this dish. Thanks to the special marinade and spices, the knuckle turns juicy, aromatic and very satisfying.

You will need

  • - Pork knuckle back - 900 - 1000 g;

  • - Garlic - 4-5 cloves;

  • - Mustard - 1 tsp;

  • - Mayonnaise - 1 tbsp. l.;

  • - Honey - 1 tsp;

  • - Black ground pepper - 1 tsp;

  • - Salt - 1 tbsp. l.;

  • - Bag for baking.

Rinse the pork shank under running water and pat dry. Make 7-8 deep cuts in it from all sides. In a small bowl, mix black pepper and salt. Rub the whole shank with this mixture, including the skin and paying particular attention to the notches.

Peel the garlic and cut into thin longitudinal plates. After that, place them in the incisions and press them into the pork pulp with your finger.

Prepare the marinade for the shank. To do this, in a separate bowl, mix mayonnaise, honey and mustard. If honey with grains, mix the mixture as thoroughly as possible so that it becomes a homogeneous consistency.

Transfer the shank to the bowl and thoroughly coat it with marinade on all sides. After that, cover with cling film and put in the refrigerator for 5-6 hours or at night.

When the pork knuckle is marinated, turn on the oven and set the temperature to 160 degrees before starting cooking. Take the baking bag and place the shank in it. The ends of the package must be tied with thread or fixed with clips. An important point: enough air should remain in the bag so that the knuckle is not too tight for him. In this case, you do not need to make punctures in the package!

Place the workpiece on a baking sheet or in a baking dish and send it to the oven for 2 hours. After time, evaluate the readiness of the shank visually - it should become a beautiful golden color. We don’t take it out right away. Leave to lie down for 30 minutes in the oven turned off to balance the difference in temperature.

Remove the finished product from the oven and place on a tray. Carefully cut the bag. The knuckle along with the juice that has stood out can be transferred to a separate bowl. It is better not to drain the juice. In the future, they can pour the meat itself or a side dish, which will be served to him. For example, boiled potatoes.
