A soup made from rice is the best choice to feed your family during lunch. Fragrant, rich soup will surely become a lifesaver for busy mothers and working housewives. After all, this dish does not require special financial costs, and the products included in its composition are often always found in the refrigerator.

You will need

  • - meat (chicken breast or beef brisket) - 500 g;

  • - rice - 250 g (a little more than 1 cup);

  • - large onions - 1 pc.;

  • - carrots - 1 pc.;

  • - medium-sized potatoes - 3 pcs.;

  • - ground black pepper;

  • - bay leaf - 3 pcs.;

  • - salt;

  • - sunflower oil - 2 tbsp. l.;

  • - Fresh dill and / or parsley (optional).

Rinse the poultry meat or beef under running water and dip in the pan. Collect 3 liters of cold water and place on the stove. After boiling, remove the formed foam, cover with a lid and reduce the temperature to a low value.

If you have beef, then the cooking time is about 2 hours. If chicken, then about 40 minutes. Therefore, depending on what kind of meat you have chosen, you need to count the time when to proceed to the next stage of cooking the soup.

30 minutes before the meat is cooked, put the rice in a bowl and rinse it several times until the water is completely clear. After this, pour the groats into the pan, bring to a boil, and then lower the temperature to a minimum.

Peel all vegetables - potatoes, onions and carrots and rinse. Cut potatoes into cubes, onions into thin quarter-rings, and carrots into small cubes. Send potatoes immediately to the pot for meat and rice. And from the carrots and onions we will make the frying.

Take a pan and pour in sunflower oil. When it warms up, put the onion in a pan and pass it until transparent. Then drop the carrots and fry them with onions until golden. Add black ground pepper and mix. After that, the pan can be removed from the stove - the frying is ready.

5-10 minutes before completing the preparation of rice soup, put the fry, bay leaf and salt to taste in a pan. Then remove the lid from the pan and cook until the end of the allotted time.

Pour the finished soup into portions, in each of which put a piece of meat and sprinkle with fresh chopped herbs (parsley, dill). Serve the dish to the table with breadcrumbs or fresh bread, as well as pickles or vegetable salad.

Useful advice

Rice soup can also be prepared without meat. In this case, you will need a pre-cooked chicken broth (3 l). At the same time, the cooking process and proportions remain unchanged.
