Zira seeds, also known as cumin, are a traditional oriental spice. It quickly gained popularity among many Russian culinary specialists due to its characteristic nutty aroma and original, slightly bitter taste. Usually, zira is used in recipes for meat dishes, as well as as components of universal marinades.

Spicy beef with cumin
If you like fried meat with hot spices, then beef tenderloin with cumin will delight you with the richness of its taste. Zira seed will add a unique flavor to a hot dish. For 300 g of beef, take this set of ingredients:
- soy sauce (1 tablespoon);
- rice wine (1 tablespoon);
- table salt to taste;
- vegetable oil (3-4 tablespoons);
- garlic (2 cloves);
- grated ginger (1 teaspoon);
- feathers of onions (1 bunch);
- red chili pepper (1 pod);
- ground cumin to taste.
Thinly cut the beef tenderloin across the fibers in strips, then marinate at room temperature in a mixture of soy sauce, rice wine and table salt. After 15-20 minutes, heat refined vegetable oil in a cast-iron skillet and fry beef on both sides for 2 minutes.
Then add finely chopped chili pepper, grated ginger and crushed garlic to the meat. If necessary, add vegetable oil and cook beef for another 1-2 minutes. Remove the meat from the pan, place in a serving dish and sprinkle with crushed zira, as well as finely chopped onion feathers.
To grind zira seeds yourself, heat them in a dry pan and grind in a blender.
