In order to make an apple pie according to the French recipe, first of all make a baking dough. Take a large bowl and sift into it the necessary amount of flour through a fine sieve. Grate 100 grams of cold butter on a coarse grater and add it to the flour. Gently mix the ingredients. Do not rub the butter with your fingers; it should remain cold. Add 40 grams of granulated sugar to the flour and butter and mix everything with a tablespoon to make butter crumbs.

Take 2 chicken eggs and separate the whites from the yolks. Add the yolks to the dough, and also add vanillin. Roll the dough into a ball with quick movements. Wrap it in cling film and put in the refrigerator for 30 minutes. Take care of the filling at this time.

Take the apples, wash them and peel them. For each apple, remove the core and seeds, and then cut the fruit into slices and sprinkle with lemon juice so that they do not darken.

Remove the dough from the refrigerator and roll it into a layer 5 centimeters in diameter larger than the diameter of the baking dish. Lubricate the baking dish with a small amount of vegetable oil and transfer the rolled dough into it, form the sides at the base for the apple pie. Put the sliced ​​apple slices into the base of the dough. Melt the remaining 50 grams of butter over low heat or in a water bath and pour them into slices. Sprinkle the filling with sugar, optionally you can add ground cinnamon.

There is another famous French apple pie - Tarte Tatin. For its preparation, apples are pre-fried in butter, sugar is added to them, so baking has a pleasant caramel flavor.

Ignite the oven to 200 ° C, place a cake pan in it and bake for 30 minutes. Remove the finished baked goods from the oven and cool at room temperature, remove from the mold.
