  • - two green peppers;

  • - olive oil - 7 tbsp. spoons;

  • - sugar - 1 tsp;

  • - salt - to taste.

Cut the tomatoes and onions. Peppers and zucchini clear of seeds, cut into cubes.

Heat three tablespoons of oil in a saucepan, add onion, cook for five minutes over low heat, stirring occasionally. The onion should become transparent. Add zucchini, fry for five minutes, stirring occasionally.

Fry the tomatoes separately in oil. Cool, whip in mashed potatoes in a blender, sprinkle with sugar and salt, pour into zucchini, mix. Cook for 25 minutes over low heat, adding water if the mixture seems too thick.

In a frying pan where zucchini was fried, heat two tablespoons of oil, add green peppers, cover, leave on the stove for 25 minutes, stirring occasionally. Stir in the prepared peppers to the zucchini, serve immediately in a heated deep dish.
