To make a Tatar pie, you can use beef or chicken, but the dish is especially aromatic with lamb. Start cooking with meat. Cut it into small pieces, salt and pepper to taste, add spices at your discretion. Mix well and refrigerate for about an hour. Cook the dough at this time.

The flour needs to be sifted, then the dough will be airy. Grate the butter on a coarse grater and add to the flour. Mix thoroughly with your hands. Add sour cream, milk or water, vinegar and knead the dough. You should get a ball. Cover it with cling film and refrigerate. After 20 minutes, roll out the dough, fold it in the form of an envelope and return to the refrigerator for 20 minutes. This procedure needs to be repeated several times, only then the dough will turn out puff, and this is exactly what is needed for the pie.

While the dough is in the refrigerator, it's time to do the filling. Cut potatoes into slices, onion rings or half rings. If the dough is ready, proceed to the next step. Divide it into two parts: one should be slightly larger than the second. Roll out most of it in a circle and place in a greased baking dish. Keep in mind that the dough should be larger in diameter than the shape, so that it is possible to form the sides and bottom.

Put a layer of meat and potatoes on the dough, lightly crushing, cover the products with a layer of onion. Put a few slices of butter at the top. Just remember that you need it very little if you cook from fatty meat, and if the filling, for example, from chicken, then you can not spare oil. Cover the pie with a second round of dough and pinch the edges, connecting with the bottom layer. Make a hole in the center and cover it with a small onion. Brush the cake with egg yolk and put in the oven. Bake at a temperature of 180-200 degrees for about an hour and a half. Remove the finished dish from the oven, let stand for 20 minutes. Now you can treat your loved ones!

When the cake is well browned, cover it with foil and reduce the temperature.

Useful advice

The cake will turn out to be very juicy if, during the cooking process, pour broth or water through the hole every half hour and cover again with the onion.
