You will need

  • - 1 medium eggplant;

  • - 1 tablespoon of salt;

  • - 1 sweet pepper red or yellow;

  • - 2 medium-sized carrots;

  • - 1 small onion;

  • - 2-3 cloves of garlic;

  • - 2 tablespoons of white vinegar;

  • - 1 spoon of black pepper;

  • - 2-3 tablespoons of vegetable oil for frying;

  • - ½ cup chopped dill or parsley.

Eggplant needs to be washed and cut into long thin strips. Put in a bowl, salt well, mix and set aside for now.

Peel sweet pepper from the core, peel a small onion from the husk. Cut the pepper into strips, and onion the way you like best - you can half rings, or you can smaller. Transfer the mixture of vegetables into a bowl with a lid.

Grate carrots, add them to vegetables. Put crushed garlic cloves and white vinegar there. Mix everything well so that the vegetables are well saturated with vinegar.

After at least an hour, squeeze the eggplant out of excess liquid by hand. Warm the pan with vegetable oil and fry the eggplants in it until tender. It takes about seven minutes. Add ready-made eggplant to other vegetables and mix. Add salt, pepper and herbs to taste.

Cover the salad and put in the refrigerator for two hours.
