Put carrots, potatoes and onions in a pan, add finely chopped parsley. Pour the vegetables with water and bring to a boil. Then close the pan with a lid and cook over medium heat for 15-20 minutes.

Remove the pan from the heat, carefully drain the water. Using a blender, in a pinch mixer, turn the cooked vegetables into mashed potatoes.

Boil the milk. Add it to mashed vegetables. Put sour cream, salt and pepper to taste. Stir the cream soup well, you can use a blender for this. Boil over low heat for about 10 minutes.

Finely chop the green onions. Pour the soup into plates. Garnish the plate with mushrooms and sprinkle with chopped onions.

Serve the carrot cream soup hot. Offer bread sticks, croutons, or fresh white bread with the soup.

Carrots for soup should choose a bright orange color. The more juicy the color, the more carotene (vitamin A) in the vegetable.
