    • 150 g of flour;
    • 4 eggs;
    • 80 g of brown sugar;
    • 350 ml of heavy cream;
    • 1 orange
    • 2 tablespoons of powdered sugar;
    • 2-3 tablespoons of cold water;
    • cream spray;
    • 100 g of walnuts.

Wash the carrots well with a brush, peel and cut into large pieces. Steam for 30 minutes until cooked. Of course, you can cook carrots on the stove in the usual way, only in this case, cook root vegetables whole without peeling. Remove the zest from the orange, squeeze the juice. Grate boiled carrots on a fine grater or grind in a blender, transfer to a bowl and add orange juice.

Pour the flour onto a wooden cutting board and add the sliced ​​chilled butter. Set aside a few pieces. Cut the butter and flour with a knife, and gradually adding cold water, knead the dough.

Grease a round baking dish with a diameter of 26-28 cm with butter or margarine and sprinkle lightly with flour. It will be better if you take a split mold for cooking carrot cake. It will be much easier to remove the finished product from it. On a table sprinkled with flour, roll the dough into a layer equal to the diameter of the mold. Carefully lay the formation in the mold, evenly distributing it, pierce in several places with a fork and refrigerate for 30-40 minutes.

In a separate container, beat the eggs with sugar. Gradually, continuing to whisk, add cream. Mix the egg and cream mass with carrot puree, put the grated orange zest in the mixture. Take the mold with the dough out of the refrigerator, put the cooked carrot mass on the layer, spread a few pieces of the remaining butter on top.

Preheat the oven to a temperature of 180 ° C. Bake carrot cake for 35-40 minutes. Then let it cool slightly and carefully remove from the mold. Spread the cake evenly with spray cream, sprinkle the chopped walnuts on the sides and treat the family with a delicate, tasty and healthy treat.
