Compote is a delicious, vitamin-rich soft drink. Cooked at home, it does not contain dyes or preservatives. And so that this healthy drink is on your table all year round, cook and roll it in cans. For example, it tastes very good and cherry compote is stored for a long time.

Rinse the berries well under running water and sort out the stalks, leaves and other debris. Make sure that there are no crumpled or spoiled fruits.

Set the cherries aside for a while and prepare the syrup. Put a pot with two liters of water on a slow fire. When the water begins to heat up, add sugar and mix well.

Bring the syrup to a boil. Then add some vanilla and lemon peel. Cook another 2-3 minutes and remove the pan from the stove. Also, if desired, spices can be added here. For example, cloves or ginger.

In parallel with the syrup, prepare a jar in which the compote will be stored. Wash it thoroughly with hot water and dishwashing detergent. Then sterilize in a way convenient for you - in the oven or over steam. Then put the cherry in a glass container. Pour the berries with the prepared syrup, after removing the lemon peels from it.

The syrup should fill the jar to the brim so that all the air comes out of it. Roll compote with an iron cover. Wrap with a blanket and put in a warm place for 2-3 days. Be careful not to swell the covers.

Then the compote can be lowered into the cellar or put in the pantry. In winter, before serving, the berries from the drink can be laid out in a vase and served as a separate dish. They can also decorate dessert.

Do not forget that compotes of stone fruits or fruits must be drunk throughout the year. Otherwise, you risk poisoning yourself and your loved ones with a drink. After all, the bones contain poison - hydrocyanic acid. And after 12 months of storing compote, it passes from seeds to fruits. If you are afraid that your family will not manage all the winter supplies in one year, then carefully put the seeds out of them before putting fruits and berries in a jar.

Instead of cherries, you can use any other berries and fruits to make compote, or even make assorted ones.
