The working temperature for milk chocolate is 30-32 degrees, and for white - 28-30 degrees. These actions are necessary in order for the future product to acquire a pleasant shine, hardness and fragility. Chocolate prepared in this way will have a uniform structure, a pleasant aroma and a long shelf life.

Make figures using special chocolate molds. They can be bought at ware shops, confectionery supermarkets, in various online stores offering goods for confectioners. Wipe the form thoroughly with a towel, paying attention to all bends and small grooves.

Gently fill the mold with chocolate, without adding to the top. Slowly tap the mold on the table so that all the air comes out, and the chocolate is evenly distributed over all the recesses. To make sure that there are no air bubbles inside the figure, raise the shape and look at the bottom of the product.

Place filled forms in the refrigerator. Hardening time depends on the size of the figure. On average, it takes 10-30 minutes. To be sure that the chocolate is completely frozen, look at the bottom of the mold. Color should be uniform. No silver stripes or shadows should be visible on the figure.
