  • - broth or water - 300 ml;

  • - large carrots - 1 pc.;

  • - tomatoes - 2 pcs.;

  • - large red onions (or onions) - 1 pc.;

  • - broccoli - 100 g or cauliflower - several inflorescences;

  • - green peas (you can take frozen) - 100 g;

  • - green beans - 150 g;

  • - garlic cloves - 2-3 pcs.;

  • - dry white wine - 80 ml;

  • - vegetable oil (it is better to take olive) - 3 tbsp. l

  • - butter - 30 g;

  • - ground black pepper;

  • - salt;

  • - parsley or green basil - several branches (optional);

  • - deep thick-walled pan with a lid.

One of the features of risotto is that you do not need to wash the rice for this dish. So he retains the starch necessary for a viscous consistency.

First of all, peel red onion and garlic and chop into small pieces. Then take a pan, pour vegetable oil into it, warm it up well. Put the butter, melt it, and then pour the chopped onion and sauté until golden brown. After that, drop the garlic and fry with onions for about 1 minute.

In the meantime, peel the carrots, cut them into small cubes, put in a pan and fry until half-cooked.

Now comes the turn of rice. Sprinkle it with onions, carrots and garlic (it must always be dry), mix with vegetables and fry in such a way that each rice is covered with oil. So the cereal will fully absorb the whole aroma of vegetables.

As soon as the rice is fried, pour in white wine, bring to a boil and, stirring vigorously, fry until all the liquid has melted from the pan.

Place the tomatoes in a cup, make 2-3 cuts on them, pour boiling water to the top and leave for a minute. After this, drain the hot water, cool the tomatoes under cold running water and remove the skin. Then cut them into small cubes and add to the pan to the rice and vegetables.

Now put the green peas. And then pour boiling water or broth into the pan. Reduce temperature to low, cover and simmer for 10 minutes.

When the time is up, add broccoli and green beans, as well as salt and black pepper to taste. Stir together and simmer for another 10 minutes. Risotto with vegetables is ready! Remove the pan from the stove. The dish can be served immediately to the table, decorating each serving with parsley or basil leaves.
