You will need

    • 3 medium sized zucchini;
    • 4 eggs;
    • 2 onions;
    • 3 tbsp flour;
    • 1.5 cups of vegetable oil;
    • 100 g of feta cheese;
    • 1 tomato;
    • a bunch of parsley;
    • a bunch of dill;
    • 1 tsp dry mint;
    • salt
    • ground pepper to taste.

Wash the zucchini and peel them. Rub them on a fine grater or grind them with a blender or food processor. Salt the resulting mass, mix it properly, squeeze the resulting juice with your hands and drain it.

Peel the onions, wash them and grate. Mash the cheese.

Peel the tomato and cut it into small cubes. Finely chop the parsley and dill.

Put all prepared ingredients in a bowl with grated zucchini. Beat the eggs lightly and pour them into the mixture. Add salt, pepper, dry mint, flour and mix well.

Start frying fritters. Heat the pan, pour a little vegetable oil on it and reduce the heat. Take a little zucchini dough with a tablespoon and put in the heated oil.

Put no more than four servings of the dough on the pan at a time, otherwise the pancakes may stick to each other. Fry them over medium heat until golden brown.

Turn the pancakes over with a spatula and fry on the other side. Put them on a plate.

Fry in this way the whole squash. Put the pancakes on a plate or in a bowl as they are cooked, wait for the oil to drain, and transfer them to the dish.

Serve hot squash pancakes with mint on the table as a standalone dish. You can put sour cream to them.

Zucchini fritters can be cooked with fresh mint. In this case, leaves from a small bunch of this green will be required (do not use the stem). Finely chop them and add to the dough before starting to fry the pancakes.

Useful advice

To prevent the pancakes from sticking to the pan during frying, before pouring the dough, warm the pan well, pour the vegetable oil on it and wait a little to let it heat. And only then put a spoonful of dough.
