  • - 150 g of sugar;

  • - 100 g of softened butter;

  • - zest of 1 lemon;

  • - 30 g of raisins (instead of raisins, you can use any other dried fruits, as well as poppy seeds, candied fruits or nuts);

  • - 1 tbsp. l semolina.
  • For glaze:

  • - 60 g of butter;

  • - 60 g of sugar;

  • - 3 tablespoons sour cream;

  • - 2 tbsp cocoa powder.

Rub the cottage cheese through a sieve. Please note: the cottage cheese must be dry, otherwise the cheesecake will be dense and tasteless. To avoid this, the excess fluid should be squeezed through cheesecloth.

Squirrels are separated from the yolks. To do this is very simple: you need to stab the shell with a knife and gently, above the bowl, divide it into 2 halves. In this case, most of the protein will pour into a bowl. The contents of that half of the shell in which the yolk remained should be poured into the palm of the hand and fingers slightly spread so that the protein through them seeps into the bowl and the yolk remains in the hand.

Pour sugar into the yolks and beat with a mixer until smooth. Then add softened butter, grated zest, raisins, semolina and cottage cheese to the yolks. Mix everything until smooth (you can use a mixer).

Beat the whites with a mixer until stable peaks and mix gently with the curd and egg mass.

Lubricate the cupcake pan with butter and sprinkle with flour (you can instead cover the pan with baking paper). Pour the prepared mixture there.

Bake in the oven at a temperature of 180 degrees for about 50 minutes.

When the Lviv cheesecake is ready, take it out of the oven and let it cool completely, after which we will remove the product from the mold by turning it onto a dish.

We make the icing: put the butter and granulated sugar in a saucepan and put on a slow fire. Keep on fire until the butter melts, stirring continuously. Add sour cream and cocoa. Constantly stirring, bring the icing to a boil and immediately turn off the fire.

Pour the cooled syrnik with hot glaze and put in the refrigerator for the night.
