In order to cook the minced meat, cut the meat with oblong, not very thick pieces no more than ten centimeters long. Turn the meat through a meat grinder. If you have a well-ground kitchen knife, finely chop the minced meat with a knife. Cutlets from such minced meat will be much tastier than those prepared from meat minced through a meat grinder.

Cut the onions into quarters and also roll them through the meat grinder so that you get a homogeneous onion puree without slices. You can beat the onion in a blender.

Cut the crusts off the slightly browned bread and soak it in milk. Combine minced meat with onion puree, add soaked bread. Salt the minced meat, sprinkle it with ground black pepper and mix well.

Form cutlets. To do this, scoop the minced meat with a tablespoon, put it in your palm and transfer it several times from hand to hand, squeezing and patting slightly. To prevent forcemeat from sticking in your hands during this operation, periodically wet your hands with cold water.

Roll the patties in breadcrumbs, put in a preheated pan with butter and fry until cooked. Ready cutlets should be grayish in cross section.

For the preparation of minced meat, you can mix in equal proportions different meat: pork, beef, lamb.

In order to give the cutlets an additional flavor, you can add a little smoked bacon to the minced meat.

Try not to take too fat meat for cutlets: meat cutlets from fat minced meat poorly retain their shape and greatly decrease in volume.

A small amount of butter can be added to the minced meat cutlet made from lean meat. Then the cutlets will be more magnificent and juicier.

Instead of black pepper in cutlets, you can put any spices for meat that you like.

In the breadcrumbs for cutlets, you can add a little seasoning.
