  • 1 kg. zucchini
  • 400 gr. red tomatoes or 100 gr. tomato paste
  • 4 large onions,
  • 1 pod of small hot red pepper (can be dried),
  • 2-3 pods of fresh sweet red pepper,
  • 1 teaspoon ground red pepper
  • 1 teaspoon of sugar
  • salt,
  • 1/2 cup soy or sunflower oil.
  • Zucchini cooking method:
  • We take young zucchini, wash it, cut the peel from them, cut it lengthwise, take out the seeds and the fibrous middle and rub the cleaned halves on a coarse grater. Peel the onion and finely chop it. Wash red pepper, clear of seeds and finely chopped. Wash my tomatoes, scald with boiling water, remove the skin and finely chop.
  • We take a wide pan, pour vegetable oil into it, heat it and spread the chopped onion there, fry lightly, without browning, add mashed zucchini, finely chopped red pepper, as well as all seasonings and simmer for about 30 minutes. Stew the tomatoes separately, grind and combine with zucchini. Stew for another 10 minutes.
  • Vegetables prepared in this way can be served as a salad, along with dumplings or rice. Bon Appetit!
