Instruction manual

1

Greek tzatziki or zaziki sauce is used as a must for traditional Greek dishes such as kebab or gyros, and is often served as dip with bread and vegetable sticks. It has such an original and refined taste that even the simplest dishes can make the food of the gods. This sauce is often called cucumber, as its simple composition includes cucumbers, garlic, dill, salt, lemon and yogurt. It is very economical and quick to prepare. Professionals do not recommend filling it with excessive additives in the form of bell pepper, olives, parsley or overloading it with vegetable oil.

2

To prepare the sauce, you need to choose the right yogurt. It should not be too thick, but not too thin. Cucumbers are bought at the rate of 4 pieces of a small size per half-liter capacity of yogurt. After washing, they are cut lengthwise and the seed part is taken out with a spoon. You can not do this, but then the sauce will be more liquid. Cucumbers rubbed on a coarse grater and salt. Letting them stand for about 15 minutes, drain the resulting juice. Put yogurt in the same bowl. If it is too liquid, you can put it in a bag of gauze or a dense cloth for a while and hang it so that the excess liquid is glass.

3

After cleaning the garlic cloves, grind them with a garlic press or cut them very finely with a sharp knife. The amount of garlic for the sauce can be changed depending on preferences, maybe someone does not like the taste too sharp. Usually three small slices are enough for this amount of yogurt and cucumbers, food lovers can sharpen this amount to six. The crushed garlic, salt and pepper are added to taste in the resulting mixture and mixed thoroughly. Greek sauce always contains dill, but many believe that without herbs it is much tastier.

4

At the last stage, the prepared mixture is slightly sprayed with lemon juice (in no case vinegar!) And a little olive oil is added. You can irrigate the sauce with oil, but do not put more than one tablespoon, otherwise it will become "heavy." Having finally mixed, the culinary masterpiece can be considered ready. The container is tightly closed and put in the refrigerator for an hour and a half. Chilled Greek sauce tastes much nicer. It can be added that it is low-calorie, therefore adherents of diets and supporters of a healthy diet can safely include it in their menu.
