Rinse beef, remove all films and veins. Cut into small pieces, about the size of a matchbox.

Take dense large prunes of sour varieties. Prune pour boiling water for three to five minutes. Rinse under running water and sort. Remove bad berries, make sure there are no seeds or debris. Rinse again and let the water drain.

Grate carrots on a coarse grater.

Combine beef, carrots, prunes, salt and black pepper. Add ketchup and mix so that all the ingredients are flooded with it. If the ketchup is thick, just put everything in a container with a lid, close the lid and shake well. Ketchup and spices are spread evenly.

Refrigerate the beef for 12-24 hours. During this time, the meat will be pickled. Cooking time will be reduced, and beef will be juicy and soft.

Take out the pickled beef. Arrange it in ceramic batch pots. Fill the pots with beef about 1/3 of the total. Place peeled and chopped potatoes on top. Add boiled water to cover potatoes. Portion pots can be replaced with a large roasting pan with a lid or a cauldron with thick walls and a round bottom.

Put the pots in the oven and simmer at a temperature of 200 - 220 degrees for about half an hour. Then add red wine and dry herbs to the pots. If the greens are fresh, they are put in a dish 5 to 10 minutes before the end of cooking. Reduce the temperature to 180 degrees and simmer for another hour.

Ceramic baking dishes are placed only in a cold oven and heated gradually so that the ceramics do not crack from a sudden change in temperature.

Meat marinated in this way can not only be baked in the oven. It can be stewed in a conventional pan without adding water, wine and potatoes. In this case, you can choose boiled rice for a side dish.

During cooking in the oven, the contents of the pots often splash and burns. It can be very difficult to clean the oven from such a deposit, and the next time you use it, the oven can smoke very much. To prevent this from happening, place a baking sheet in the oven under the grid with pots. It will be much easier to wash it, but the oven will not suffer.
