You will need
- - 3 eggplants,
- - 500 g tomato
- - 2 carrots,
- - 3 onions,
- - 3 bell peppers,
- - salt to taste,
- - 3 tbsp. tablespoons of vegetable oil
- - 12 cloves of garlic.

Peel the eggplant, cut into cubes and fill with cold water, leave for 15-20 minutes.

Squeeze the eggplant and put them in a slow cooker, add 3 tablespoons of vegetable oil, set the mode "Stewing" for 1.5 hours.

After 15 minutes of stewing, add half rings of onions and grated carrots to the eggplant, continue to simmer another 15 minutes.

Remove the peel from the tomatoes, cut into medium cubes, add to the slow cooker to the vegetables, simmer for 15 minutes.

Rinse the bell peppers, peel the seeds, cut into cubes and add to the vegetables, simmer the remaining time.

Grind the cloves of garlic in any convenient way (through a press or grate). 10 minutes before the end of the stewing program, put the garlic in vegetables, season with salt, add vinegar and mix. If you do not like vinegar, then you can do without it. Arrange the workpiece in prepared sterilized jars, roll up the lids, cover with a towel, cool and put in the pantry or cellar for storage.
