Sort and rinse the beans. Pour it into the pan, fill it with a large volume of water and set it to soak overnight for at least 5 hours. When soaking, its beans soften, increase in volume and gain weight. In addition, in the process of soaking, substances harmful to humans, which are contained in beans, are destroyed: glycoside phasin, phaseolunatin, and bean oligosaccharides that are not perceived by the human body are dissolved in water. After soaking, drain the resulting solution, fill with a large new volume of water and set to boil, stirring occasionally so that the beans do not stick to the bottom of the pan.

Boil the beans for an hour and a half. When the water is half boiled, salt to taste. Make sure the boil is strong enough. It is of great importance that when cooking beans in a pan there is a constantly high temperature. In this case, the harmful substances in the beans are destroyed. If you cook this bean culture in dishes intended for slow cooking, then the toxins will only increase their effect. At the end of cooking, add, if necessary, spices: bay leaf, pepper, etc. Beans are ready, if it has become so soft that it can be cut with a spoon.

Wash and sterilize jars. This can be done both in the oven, and for a couple, and in the microwave. Wash and sterilize the covers at the same time. Fill the jars with cooked boiled beans, and evenly pour the remaining liquid so that it covers the beans. But at the same time, leave the neck of the jars free by at least 1 cm. Prepare a five-liter pan for a water bath. To do this, it is enough to lay a piece of cloth or towel rolled up in several layers at the bottom of the pan. Place jars filled with beans in a pan and pour boiling water over it. Pasteurize the jars depending on their volume: half-liter - 15 minutes, 700-gram - 20 minutes, liter - 30 minutes. Roll up jars with sterilized lids.
