Tender, slightly fresh pork needs to be accompanied by brighter-tasting ingredients. Tomatoes are perfectly combined with it, giving the meat a pleasant sourness. Spices that are too harsh should be ruled out, preferring parsley, basil, black pepper.

Pork schnitzels

You will need:

- 2 pork schnitzels;

- 1 small onion;

- 3 tomatoes;

- 400 g of boiled mushrooms;

- 0.5 tsp dried basil;

- olive oil for frying;

- salt;

- freshly ground black pepper.

Peel and chop the onion. Wash the schnitzels, dry with a paper towel and rub with a mixture of onions, salt, freshly ground pepper and dried basil. Fry the meat in a not too hot pan, then transfer it to a plate and place in heat.

Scald tomatoes with boiling water, remove the peel. Finely chop one and a half tomatoes and stew with a little oil in a pan where the schnitzels were fried. Add salt and pepper. Cut the remaining tomatoes into circles and also lightly fry. Chop mushrooms with thin plates and fry in a separate pan.

Pour the stewed tomato sauce into the mold, put the schnitzels on top. Cover each with plastic cheese and place in the oven, preheated to 180 ° C. When the cheese has melted, transfer the pork to warmed plates on top of the fried tomatoes. Place mushrooms nearby.

Chop with tomatoes and cheese

You will need:

- 2 pieces of pork loin (each 300-350 g);

- 50 g of semi-hard cheese;

- 1 large tomato;

- 1 onion;

- olive oil;

- salt and ground black pepper.

Chop the pieces of the loin, sprinkle with salt and freshly ground pepper. Heat the olive oil in a pan and fry the meat in it until golden brown. Cut the cheese into slices, tomatoes into thin slices. Chop the onion with ringlets.

Transfer the pork to a greased dish. Put onion rings on each piece, cover them with tomato slices and cheese plastics. Place the mold in an oven preheated to 180 ° C. Cook until the cheese is melted. Serve chops with chilled white wine and fresh grain bread.
