But to completely abandon the main dishes is still not worth it, because you can use their summer options. For example, cook dumplings not with potatoes, but with cherries.

    • semolina 1.5 tbsp

Knead the dumpling dumplings. Sift a glass of flour through a fine sieve. This will saturate it with oxygen and make the dough more tender.

Pour the flour into a large plate, in the center of the slide make a depression. In a separate bowl, whisk two eggs slightly with a whisk. Pour them into flour, add salt to taste and gradually pour half a glass of water, kneading the dough with your free hand. By consistency, it should turn out to be steep and elastic. When the dough stops sticking to your hands, cover it with a napkin and leave it for 20-30 minutes.

Prepare the filling at this time. Sort the cherries, remove the seeds from them. Put the berries on a plate and pour sugar on it - about half a glass of sugar per pound of cherry. When the juice appears, drain it into a separate container.

The main difficulty in making such dumplings is the appearance of juice in the filling, due to which the dough can stick out. To avoid this, add semolina or corn starch to the berries along with sugar - 1.5-2 tablespoons per 500 g of cherries. If there is no decoy, you can put the cherries, already peeled and secreted juice, into the freezer. It will be much more convenient to work with frozen berries.

Roll the dough for dumplings into a layer 3 mm thick. Cut it into circles with a glass. Add about a teaspoon of the filling to each circle - it should not be too much, otherwise the dumpling will break during cooking. Each circle is folded in half and fastened at the edges. To make the edges of the dumpling stick better, they can be greased with a beaten egg.

Cook stuck dumplings in salted water for 6-8 minutes. Serve them hot on the table, watering with the left cherry juice mixed with sour cream.

Useful advice

If you blot the edges of a dumpling with a pigtail, pre-knead them stronger than the rest of the dough so that this part of the dumpling is thin enough and has time to boil.
