    • pork fillet (300 g);
    • ground black pepper;
    • butter (20 g);
    • salt;
    • dark grapes (150 g);
    • white grapes (150 g);
    • celery stalks (4 pcs.);
    • onions (2 pcs. small);
    • lettuce (6 pcs.);
    • walnut (20 g);
    • For the sauce:
    • blue cheese (75 g);
    • nonfat milk (2 tbsp);
    • sour cream (100 g);
    • wine vinegar (1 tablespoon);
    • vegetable oil (2 tablespoons).

If necessary, remove films from meat. Rinse it under running water. Blot with a paper towel and rub with pepper.

Heat butter in a deep skillet. Heat the pan thoroughly and fry the meat in it from all sides for fifteen minutes. Salt well and gently wrap in foil.

Wash the grapes thoroughly and dry well. Separate the berries from the brush, cut in half and remove the seeds.

Peel, wash, dry, and cut celery into circles about one centimeter thick. Cut large leaves into strips.

Peel the onions, wash in cold water and chop very finely.

Separate the salad into separate leaves, wash and shake off the water. Coarsely chop the leaves.

Grate cheese on a medium grater, knead in a uniform sauce with milk, sour cream, vinegar and vegetable oil. This is best done with a mixer. Season to taste with salt and pepper.

Put the pork from the foil and slice it obliquely to the fibers into slices about 5 mm thick. Lay in the shape of a flower on a flat dish, leaving room for a core.

Mix the salad, grapes, celery and onions with the sauce and lay in the shape of a ring on the meat. Sprinkle with nuts and garnish with halves of grapes. Serve the pork salad to the table.

Serve only a long loaf of fresh white bread for the salad.

note

You need to decorate the salad sparingly so that you can see what it consists of.

If the pork is completely dark and covered with films, then the meat during cooking will be hard and dry.

The readiness of pork can be checked with a knife. The knife should easily go into the meat.

Salads made from meat and vegetables subject to heat treatment are seasoned and decorated no earlier than 45 minutes before serving.
