You will need
- For six servings:
- - water - 3/4 cup;
- - sugar - 3/4 cup;
- - light corn syrup - 1/4 cup;
- - natural yogurt - 1 cup;
- - buttermilk - 1 glass;
- - lemon juice - 1/4 cup;
- - grated ginger - 2 teaspoons;
- - lemon peel - 1 teaspoon.

Combine water, corn syrup, sugar, and ginger in a saucepan. Put the pan on medium heat, stir until sugar dissolves.

Bring the sweet mixture to a boil, cook for two minutes. Strain in a small container, cool.

Add lemon zest, lemon juice, buttermilk and yogurt to the chilled mixture, mix everything, transfer to a container or ice cream.

Clean for a couple of hours in the freezer, stirring every half hour.
Useful advice
Serve the finished yogurt lemon-ginger ice cream with mango cut or caramelized ginger. Garnish with a fresh mint leaf.
