Honey mushrooms are considered one of the most delicious forest mushrooms. And this means that the soup of them turns out to be surprisingly tasty. Such a dish can be a great alternative to a hearty lunch or a heavy dinner.

You will need
- - pepper and salt - to taste;
- - potatoes - 150 g;
- - olive oil - 4 tbsp.;
- - onion - 50 g;
- - carrots - 50 g;
- - honey mushrooms - 400 g;
- - processed cheese - 2 pcs;
- - water - 1.5 l.

Rinse honey mushrooms, remove all excess and place in a pan. Pour mushrooms with cold water and, putting on fire, cook for half an hour. Next, drain the water and transfer the prepared mushrooms into a deep large plate.

Bring the water to a boil in another pan, add salt. Peel the potatoes while the water is boiling, rinse the tubers in water, cut into arbitrary small pieces and add to the pan.

Put a frying pan with olive oil to warm up. Peel the onion, cut off the back. Chop it finely with a sharp knife and grate the carrots coarsely. Fry the prepared onions and carrots in a hot pan.

Check the potatoes, if it has already been cooked, add the sliced melted cheese into the water. Make the fire weak and cook for 5 minutes. Add previously fried vegetables, boiled mushrooms to the pan and sprinkle with salt to taste. Salts can ideally sprinkle a teaspoon without a slide, but adjust the amount yourself, tasting the water.

Grate the second cheese on a grater. Wait for the mushroom soup with mushrooms to boil, and then remove the pan from the heat and pour the dish on plates. Add a little grated cheese to each plate and serve to the table with, for example, semisweet long loaf or slices of Borodino bread.
